Raspberry Cake |

| Preparation Instructions: |
- Preheat the oven to 350°F. Spray a 9-inch springform pan with vegetable spray. In a mixing bowl, add the flour, baking powder, baking soda, salt and cardamom and whisk and set aside.
- In another mixing bowl add the melted butter and sugar and whisk to combine. Add the orange juice and vanilla and whisk again. Add the egg and whisk until the mixture is pale yellow and thickened. Add the dry ingredients and mix until just combined. Pour the batter into the prepared springform pan. Dot the top of the cake evenly with 1 cup of the raspberries. Do not worry about pushing them in, they will sink into the batter as the cake cooks.
- Bake the cake in the center of the oven for 40 minutes or until the cake is nicely browned, firm to the touch and a cake tester placed in the center comes out clean. Transfer to a wire rack and let cake cool completely.
- Carefully release and remove the springform ring, using a knife to loosen the cake around the edge if necessary. Dust the top of the cake with the powdered sugar and serve with extra raspberries and whipped cream if desired.
